Imagine a mince pie, now imagine that mince pie on a level even higher than Santa Claus flies on Christmas Eve. We think that's where our Christmas Bakewell sits. And we've even made it vegan-friendly this year.
This festive twist on a traditional bakewell has a light shortbread base topped with a generous layer of mincemeat and smothered in brandy almond frangipane, toasted flaked almonds and lightly dusted with sugar snow. It's cut into squares which, when compared to a mince pie, definitely gives it the edge.
